Nina's latest cake and other weekend stuff

Nina made this cake for us this weekend. It is white cake with lemon filling and a chocolate Marine Corps emblem on top. I think this might of been her best cake ever, both how professional the decorating was and how good it tasted. Thank you Nina!

Dilly Buns
1 package yeast
1/4 C warm water
1 pinch sugar
1 cup cottage cheese
1 T butter or margarine
2 T sugar
1 t dried dill weed
1 t dried minced onion flakes
1 t salt
1 egg
1/4 t baking soda
about 2 3/4 - 3 cups flour

Stir the yeast into the warm water with the pinch of sugar in a large mixing bowl. Set aside to proof.

In a small saucepan, melt the butter and stir in the cottage cheese just until the cottage cheese is barely warm. Remove from heat.
To the yeast mixture, add all the ingredients and stir till a dough forms. Knead on floured surface until sort of smooth - you will still see the cottage cheese though.
Place dough in a greased bowl and turn to coat. Let rise until double, about 1 hour.
Punch down the dough. Roll out on a floured surface about 3/4 inch thick. Cut with a 3 inch round cutter. Place on a greased baking sheet.
Let rise again, about 20 minutes
Bake at 350 degrees, about 15-20 minutes.
brush tops with melted butter and sprinkle lightly with coarse salt.
These are great as sandwich buns. We had them with smoked pork loin for Saturday lunch.

  1. Unfortunately NO, my family tends to sit with Cell Phones in hand and are texting friends all the time. It annoys me cuz I don't get to see them often and then they sit and play on the darned phone. One day, I texted them while they were playing and asked how they were doing and how was work going,etc. They just read the message, texted back and kept on texting. I give up.

  4. WOW! WOW! WOW!! That's one talented daughter you have with her cakes! She must take her creative side after you. No watching football here - we are more into Bugs Bunny! LOL!
