We are having one of my favorite dishes for supper tonight, smoked sausage with green beans and potatoes.
Start by cooking about 2 cups of peeled diced potatoes in water. While the potatoes are cooking, saute a small onion in just enough oil so the onion will brown and not stick.I like this Healthy Ones smoked sausage. It is just 80 calories a serving. Dice the sausage and brown with the onion after the onion is cooked. Light sausage does not need to be cooked very long , it seems to break down if over-cooked.
Drain the cooked potatoes and green beans. Add to the skillet with the sausage and onions. Cover the skillet and cook on low just until heated through. Add pepper and just enough salt to taste.
This is me doing something I rarely do, cooking without an apron!
