1 Cup quick cooking oats
3/4 cup water, room temperature
3/4 C flour
1/2 teaspoons each of salt, baking powder, baking soda and cinnamon
1/4 teaspoon nutmeg
4 T (1/2 stick) softened butter
1/2 C white sugar
1/2 C brown sugar
1 egg
1/2 vanilla
Grease and flour an 8X8 inch baking pan (I used an 8 inch circle)
Combine oats and water in a small bowl and let set for at least 5 minutes
Combine dry ingredients in another small bowl.
In the bowl of mixer, cream together the butter and sugars. Add egg and vanilla. Add flour mixture and mix just until incorporated. Add soaked oats and mix just until combined.
Transfer batter to prepared pan.
Bake at 350 degrees for 30-35 minutes.
I've written before about liking dessert recipes that don't call for huge amounts of butter or eggs and this little recipe meets that requirement. It is just right for dessert on weeknights or as a coffeecake for breakfast.
