We had a fun weekend with visits from my parents, Jeff's parents and our 4 children and our 3 inlaw children. They were not all here at the same time, but there were 9 of us here for 1 meal and 8 of us here for 2 meals.
I planned out the menu ahead of time, did some of the cooking and prep work ahead of time and it worked out nicely that I was not really in the kitchen very long getting each meal ready at meal time.
I thought I would share this menu since it worked so well for us.
Friday night
homemade beef stew with crackers and cheese
assorted desserts
freezer biscuits with butter and jam
bacon, sausage and fried eggs. The eggs were free-range eggs from chickens raised by my step-son and his wife, aren't they cute?
Saturday lunch
smoked pork from the freezer heated in a crock pot with barbecue sauce served on buns
baked beans
cole slaw
Saturday night
we had supper at Garber Dinner Theater
Sunday lunch
Jeff grilled 4 chickens
Ranch style beans- straight from the can
WW potato casserole
Apple salad
Desserts
Four-Layer Dessert - this is a new recipe from Kraft and lower calorie than most desserts and was really good.
Yellow Bundt cake with chocolate frosting
Peach Crisp
Pumpkin cupcakes made by Nina
My other tip for feeding a group - keep a big stack of disposable plates on the counter, it just makes clean-up so much easier!
Love the pictures of the eggs! How beautiful. I have a thing for brown eggs - just love the colors. I used to have hens that would lay blue eggs! Love the cheddar cheese bread recipe. I have that on my list for tomorrow. Your meals sounded delicious. I know everyone came away happy and satisfied. Wonder if Nina would share her pumpkin cupcake recipe?
